Persistent Undervoltage with Argon One M.2 Case

I have added the Argon M2 case to my RPI4. I am having power problems like everyone has suggested. I am using this RPI4 as a dash computer with a sunlight readable New Haven Display. I am forced to use the 12v source in the boat to power this setup. I have tried two different 12v to 5v converters with two USB A outlets. I picked up a PlusRoc DC to DC converter, 15w-3A, with single USB C output cable and tried to test my Pi Dash to see if I get low voltage lightening bolt. I still get it and with a USB voltmeter in line it never falls below 5.0 volts.
Operating the boat, I would leave the Pi Dash on and restart the boat engine. It would kill the Pi and reboot. Something it never did with out the M.2 card. With the M.2 the speed is so much faster than SD card, I can’t go back. I have to make this work!! The M.2 card I am using is the Kingston A400 240G Internal SSD M.2 2280 SA400M8/240G.
Another problem I haven’t figured out is when I tried to power just the Argon One with the PlusRoc converter the New Haven display won’t turn on, unless I unplug the touch screen cable from the Pi to the display.

Any help with either situation would be greatly appreciated!!
